Food: Nilagang Baboy

One of my favorite homegrown food – we call this the Waray version, comes great with rice!

Here’s how it’s done:

Ingredients:
half kilo pork – you can choose any part you like (I like pork kasim or pork belly)
1 tbsp. whole peppercorns
3 -6 pcs. laurel leaves
salt (to taste)
1 to 2 red onions (depending on size, if large – one is okay)
2 – 3 pcs. tomatoes
veggies can vary (I like pechay leaves)

1. add pork and water, cook pork until tender (you may need to gradually add water from time to time)
2. once pork is tender, add peppercorn and laurel
3. add onions and tomatoes, simmer until tomato is tender
4. add salt and veggies

serve hot, love these with soy sauce, kalamansi and sili (the local variant – smaller and hotter than the big ones) πŸ™‚
