Since I have nothing else better to do…

Still on vacation leave….

So after I dragged my Dad in 3 different malls (different outdoor shops) to look for a Deuter daypack and a Nalgene water bottle, I decided to cook dinner when we got home.

Papa wanted something healthy – with veggies. Since we had about 4 oz left of the vermicelli, half of the cabbage and 1 carrot from the pancit we made for my birthday, I decided to make Pork Sotanghon.

Here’s how:

Ingredients:
4 oz Vermicelli
1/4 kilo Pork Giniling
1/2 medium-sized cabbage, sliced
1 pc carrot, sliced to strips
garlic and onions (your choice how you want to slice them)
soy sauce, salt and pepper to taste
water ( I didn’t measure, I just added them gradually)

Saute garlic and onions, add pork and cook before adding a bit of soy sauce – just enough to slightly put color into the soup. Add water, salt and pepper to taste then add the carrots. Add vermicelli, simmer for 5 mins then add cabbage. (Make sure you won’t overcook the veggies). Serves 4-5.

I made mine with less water…

You may also substitute pork with beef, tofu, shrimp, chicken or just use veggies

Hmmm…started to rain outside…perfect rainy comfort food 🙂
